For a responsible spender with no credit, wouldn't store/gas credit cards be a good way to establish credit?

Apparently, approval is almost guaranteed with these type cards.

The user would not borrow more funds than they can pay off promptly (within a week) and forgo cash advances/transfers, hopefully circumventing the potentially horrid interest rates. Gaining the card would, in essence, be planting a credit seed and nothing more.

Maybe multiple cards applied for at the same time would be even better since it should give the user a better credit-to-debt ratio, further boosting his/her credit score, and give them a back-up card to base his/her credit history on in the even that they needed to close one of the accounts for whatever reason?

Does my rough plan sound good? :D
Well, 'Becca, I'm only taking some unsecured cards into consideration based on repeat anecdotal evidence and the little detail I mentioned to you in my AmEx post. :)

Answer
Approval is no longer almost guaranteed. It used to be almost guaranteed until 2008. It is not any longer.

If you apply for multiple cards at the same time, then you are almost guaranteed to be rejected for all of them. You are more likely to be approved if you apply for just one.
